Cherry Shortbread Cookies

The key to great shortbread is getting that perfect cookie consistency, a shortbread cookie isn't too soft that it's crumbly, and it isn't so hard that it's chewy either. These cookies just kind of melt in your mouth with each delicious bite. One of the best things to remember is to keep your butter at room temperature for these cookies. You want nice soft butter but not melted butter. Also, don't skimp on cheaper ingredients, use real, full-fat, high-quality butter, and no margarine substitutes either. Makes 24
This is a printable recipe.

2 cups all purpose flour
1/8 teaspoon salt
1 cup unsalted butter, room temperature
1/2 cup confectioners' sugar
12-15 canned cherries, cut into half


Preheat oven to 350 degrees F.
Line 2 baking sheets with parchment paper.
Combine flour and salt. Set aside.
Cream the butter and icing sugar together until light and fluffy.
Stir flour mixture in butter mixture, just until incorporated, do not over work.
Cover and let rest in fridge, for 1 hour.
Roll dough into 1-inch balls.
Transfer to baking sheets, leaving a 1.5-2 inch space between cookies.
Press a cherry half lightly into the center of each cookie.
Bake cookies 12 minutes, or until top is firm when lightly pressed.
