The EASIEST Layered Taco Salad

Instead of making a salad in a bowl, why not make a fun layered salad? Melissa from Chin Deep shares some great salad recipes on her website including this easy salad recipe for layered taco salad. Her other layered salad recipes have been shared and pinned by thousands of people, so she decided to make another one that had more of a Tex Mex flavour and list of ingredients with a Tex Mex flare. Many people think that all salads are boring, but nothing could be further from the truth. You can still eat healthily and enjoy tons of great flavour; it's all about the products and ingredients you use. Instead of just using a plain sour cream on its own, Melissa created a ranch, sour cream and mayonnaise combination that she made up that results in a thick creamy layer for the salad. She also did this so that the salad will keep its shape and so it won't become soggy as it sits. Another way that you can make sure that the salad doesn't get soggy is to be sure to drain all of the canned items going into this recipe really well and dry them off. So in this easy salad recipe that would include the corn, olives and beans. She also tries to get the canned items with the lowest sodium content since canned products can contain a lot of sodium in them which isn't good for our health. You can always add more salt if you need to enhance the flavours. If you would rather not use canned products, you can also use frozen or fresh items too. Again, just make sure they are not too wet before putting them in the salad.

Another way to make this recipe a bit healthier is to use some plain Greek yoghurt rather than the sour cream, and you can also use mayonnaise with olive oil for a healthier option. You can even make your own healthy version of ranch dressing too. You can just use the powdered version of the ranch dressing with the other ingredients it calls for. This recipe uses lean ground beef for the meat in the recipe, but you could even use ground chicken or turkey for a leaner option if you preferred. If you'd like a vegetarian or vegan option you can also use some vegetarian meat instead, or leave the meat out entirely. If you do use meat in this recipe always try and obtain meat that comes from organic, pasture-raised farms that raise happy, healthy animals. These animals will be free from hormones and antibiotics, plus they are fed a healthier diet so their meat will be healthier to consume. You can usually find organic meat, eggs and dairy at the grocery store, or you can often find it at the butcher or a local organic farm.

The other ingredients you'll need for this recipe include green chillies, iceberg lettuce, taco seasoning mix, salsa, cheddar cheese, bacon, jalapeno peppers, Roma tomatoes, avocado chunks, and tortilla chips for toppings. The last few ingredients will be used as a topping for the layered salad recipe and will be added on after the layered salad has been assembled. The tomatoes in this recipe would also be best to be organic since they are on the Environmental Working Group's Dirty Dozen list which includes foods that have pesticides on them. The corn and pretty much everything else can be purchased non-organic since they are on the Clean Fifteen list. That way you can save some money since buying all of your produce organics can be pretty expensive.***
